From a Farmers Market to a Downtown Staple

Elizabeth’s passion for healthy food is a personal one. After becoming a vegetarian, she started playing around with recipes that made her feel amazing. Her creativity led her to embrace veganism, and she felt so great she wanted to share it with the world.

She started small in 2015 with a little booth at the Anacortes Farmers Market. Her juices were an instant hit, selling 226 drinks in just five hours! Elizabeth and her vitamin-packed, immune-boosting beverages became a market favorite, building a loyal customer base over time.

In 2019, she took a big leap. She moved from her 10×10 tent into a small but mighty storefront on Commercial Avenue. She started with juices and smoothies, then slowly and “organically” began to add food items. Her goal was always to give people healthy, quick options for when they’re on the go.

Healthy Meal Plans and More

And “on the go” became the name of the game during the pandemic. As people sought out healthy meals and ways to boost their immunity, Cosmic Veggies pivoted, offering to-go orders and delivery. This led Elizabeth to create her now famous 5-Day Detox Meal Plan, which includes everything from daily smoothies to dinners and snacks. It’s still one of her best sellers, and for good reason—it’s a total game-changer!

A New Chapter and New Flavors

Elizabeth loves making “comfort vegan food,” creating dishes with the textures and flavors you might miss when you go gluten-free or vegan. Her best sellers include the gorgeous Super Blue Magic Smoothie (made with local blue algae!), the refreshing Immunity Boost and Hydrate juices, and homemade veggie burgers and falafel wraps.

The community’s support has been a huge part of her journey. “I am incredibly grateful for the tremendous community support,” Elizabeth shares. “I love inspiring positive change in someone’s life. It makes me excited to come to work every day.”

In 2023, Cosmic Veggies took another exciting step, moving into a new, bigger location at 615 Commercial Avenue. The space is bright and open, with plenty of cozy spots to sit and enjoy your meal. You can dine in, grab a sandwich to go, or even snag some stylish merch to show your support for this local gem.

Elizabeth is already looking ahead, with plans to franchise the business. But for now, her kitchen is buzzing with this season’s newest flavors, like the Pumpkin Pie Protein Smoothie and the Frosted Molasses Smoothie.
